I grew up with my mother saying every fourth Thursday of November, "Well, it was another Norman Rockwell Thanksgiving."
My dad had a copy of "Doctor and the Doll" hanging in his office. It seemed only fitting for a doctor that was also the father of three little girls.
"Before the Shot" hits close to home when I have to take my boys to the pediatrician every year.
And of course my husband's favorite is "Sunday Morning," what feels to me like an accurate portrayal of more days than just Sunday...
Norman Rockwell was a man of good stature, style, and taste. His art went beyond just an image on a canvas, it told a story and touched close to home for many of us. His paintings are timeless, as appears to be his favorite cookie recipe. Courtesy of The Red Lion Inn, here it is:
Oatmeal Cookies
1 stick butter
1 cup light brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
1/4 cup water and 2 eggs well beaten
1 teaspoon salt
1 cup flour, sifted
1/2 teaspoon baking soda
About 1 cup oatmeal
Chopped Nuts (walnuts preferred)
Mix in order and drop on baking sheet. Bake 400 degrees 7 to 8 minutes. Then run under boiler to brown.
Step 1: Heat up a mug of warm milk.
Step 2: Drop in one bomb per mug.
Step 3: Sit back and watch as the bomb explodes (well, more realistically it dissolves...)
Step 4: Stir it up!
Step 5: Enjoy

Well, I am happy to say that Hot Chocolate Bombs are back, Baby! So run, don't walk, for this super special treat. They come in all different classes (Adult and Kid friendly) and colors (Dark, White, and even Rainbow!).
My dad came to visit, for the first time in 18 months (thank you COVID vaccine!), and I was over the moon. It felt special, and I wanted him to feel special. And my father, the doctor, loves his vegetables. So of course, one of his favorite cakes is Carrot Cake. Luckily, I have a friend who is a marvel in the kitchen and gave me this recipe for a homemade carrot cake. I was skeptical at first when she said it was easy, but all truth be told, the most difficult part was slicing the carrots! So, without further adieu, here is the best recipe for...
